5oz bulgur wheat
1 large chopped tomato
1 bunch chopped parsley
1 cup chopped peeled cucumber
Mint, few leaves
2 tbsp lemon juice
1 cup feta cheese (used the Mediterranean Herb kind from Wegmans)
Add 1 cup boiling water and parsley to bulgur wheat. Cover and refrigerate for 30 mins.
Add tomatoes cucumber cheese and lemon juice. Cover again and chill for up to an hour to overnight!
Enjoy- serve with some lemon wedges :-)
